I still can’t get enough of these filling, veg-heavy main meals. It’s mid-August, I know the summer has to end but I’m not ready yet. After a long, hot midday walk, nothing soothes quite like this meal (after 2 large glasses of grapefruit juice mixed with diet tonic water).
Today, I tossed in a leftover and lone kiwi and canned mandarine oranges for a sweet, juicy splash against the balsamic vinaigrette. Nuts add crunch, good fat and a tad of protein. And farm fresh tomatoes are just getting succulent and meaty in their short-lived harvest time.
It’s hard to eat this in a lady-like manner, though – the sunflower shoots end up dangling out of my mouth drizzling dressing down my chin but who cares? No ones around to see!
Off to the market now – gotta get more of this stuff!
