- ½ c. EVOO (extra-virgin olive oil)
- ¼ c. flaxseed oil
- ¼ c. white balsamic vinegar
- 4 t. lemon juice
- ¼ c. capers
- Freshly ground pepper to taste
~ Combine all ingredients thoroughly (salad dressing shaker works best to emulsify the oil and vinegar).
~ Toss salad leaves in a large bowl with dressing and serve on separate plates.
