Spring into green

After this long winter in New England, I’m so ready for spring.  The copious snow days, now rainy spring days that are damp and cool, though, call out for lighter and more alkaline fare.

Ta da, the green smoothie is nothing but veggies and fruit.  You can’t get more basic than that!  These are ingredients I tossed into my Vita-Mix this morning:  an apple, 2 carrots, 2 pitted dates, a frozen banana, 2 large handfuls of curly kale.

Since these foods are fiber-filled, and fiber is hydrophylic (loves water), and a Vita-Mix keeps the fibrous pulp, start with two cups water in the blender and add more as needed.  Even after it’s poured, it can continue to thicken.  Just add more cold water, stir and enjoy.

Order of operation for creating a luscious, smooth and vibrant smoothie is add water first, then your greens (kale, spinach, Swiss chard, parsley, watercress). Then add the softer fruits and veggies, like the banana, then apple, then dates and carrots. Blend for 2-3 minutes on high for a creation of deliciousness.

Get ready to be surprised by how filling this green smoothie is! For longer lasting satiety, though, here’s the trick: Add 2 T. ground flaxseeds (aka flax meal) and 8 T. hemp protein powder (or whey or soy protein). Guaranteed to last for hours!
