Country Unsalted

Salt Shaker

The tip posted today is almost a dream – everyone in our country would eat 1,200 mg less salt every day. This public health campaign would save nearly $24 billion a day in subsequent care of our health directly impacted by eating salt. (NEJM, online 1.20.10).

How does a computer simulation (which is what this study is about) translate into real life America? I’m talking down-home country-style Alabamian biscuits and red-eye gravy, North Carolina-style BBQ, hushpuppies and slaw, and Boston’s sliders and fries. (I’ve lived in all these places.) How will our mouth react to half the salt in our be bim bap? Or (gasp!) French fries? (more…)

Thai Coconut Curried Salmon with Greens

Simply divine over fragrant jasmine rice!

Ingredients
2 teaspoons vegetable oil
1 cup thinly sliced onion
2 teaspoons curry powder
1 cup light coconut milk
2 tablespoons sugar
1 tablespoon lime juice
1 tablespoon bottled minced ginger
1 tablespoon fish sauce
2 teaspoons bottled minced garlic
1/2 teaspoon chile paste with garlic
1 (8-ounce) bottle clam juice
1 (1-pound) salmon fillet, skinned and cut into 3/4-inch cubes
6 cups trimmed watercress (about 2 bunches)

Apples are Falling

Green Apples in a Row

Autumn brings apples – lots of them.  Tree limbs are weighed down with a rainbow array of green Granny Smiths, red and golden delicious, deep red macoun, Jonathans, winesaps, pink lady, gala, and Arkansas black.  Abundant in the fall, they arrive just as the air is crispy and dry, and the smell of freshly baked apple pie announces the transition from summer to winter. 

In Ayurveda, apples are abundant in the fall for a reason – they move the heat of summer out of your cells in time for winter; in so doing, your immunity is higher.  You have less chance of infectious stuff like the flu and common cold.  Yet, how they are prepared before eating can have different effects – according to this thousands year old medicine system of yoga.

If you tend toward dryness – as in dry skin, dry eyes, constipation – eating a raw apple will add to the dryness.  So, cook it – core and bake apples with soothing ghee (clarified butter) and warming spices like cinnamon, nutmeg and cloves in the center.  Make applesauce (leave the skins on).  Cut an apple, microwave it for a couple of minutes, then top it with plain yogurt and maple syrup.

If you have a strong appetite, eat them raw.  Or with a caramel coating, like I find offered as treats in the apple orchards of New England (I can’t wait to get there).  For fun, place them in a large barrel filled with water and see who can bob for the most apples.

As they say, an apple a day keeps the doctor away.  The sages have known this for years.  Grab your jacket – let’s go apple picking!

Mantra – Delightful & Delicious…

….and did I mention Indian?  On a fluke, I signed up for www.BuyWithMe.com and bought $50 worth of food for $20 at Mantra Restaurant on Temple Place in Boston.  It’s tucked just outside Downtown Crossing and our experience was phenomenal.  Take cash for valet parking – if you forget, an ATM is right around the corner.

A marble bar (that used to be teller cages) and a cool and calming water element catches our eye right away.  Ahhhh……after the hustle of the city, the ambiance is settling.  After being seated, I saw on the wall behind my partner a smashed cake – YES, an entire smashed cake.  Chuckling, we tell our waiter who, in disbelief, indeed verifies for himself.  Uh-huh, a smashed cake.  He relayed memories of a large wedding party, with dancing and I’m sure a fountain of alcohol, the evening before.

It didn’t bother us one bit.  The food presentation amazed – we were starving and scarfed down the small and delicious potato cake the chef sent out to welcome us.  On their website, they boast of a heating martini (named Mirchitini) of muddled cucumber, cilantro and jalapeno. Even though it hasn’t made its way to the menu, our waiter promptly went behind the bar and delivered to us a smashing good cocktail. 

There were so many tantalizing choices, we were almost overwhelmed but finally settled on apps of Jalapeno Onion Rings (can you tell we like it hot?), Subji Trio – small and satisfying portions of Chana Masala, Saag Paneer, and Dal Makhani (black lentils), fragrant basmati rice, garlic naan, and a decadent chocolate pudding cake surrounded by sugar-glazed bananas and fresh strawberries. Chocolate Dessert

You have to take a trip to the ladies room – after passing the 2 amazingly serene Buddhas at the bottom of the stairs, the powder room is a sensation unto itself.  1-way mirrors for stall doors allow you to gaze out onto the industrial sinks placed at varying heights. Toilet paper will never run out.  Each stall has 10 or so TP hangers angled along one wall – an alluring and functional art work display. 

You must go…………….and tell me if the cake is still there!

Variety – the Spice of a Diabetes Diet

This beautiful open-air market in Ecuador (photo from a friend) reminds me of the kinds of foods we should eat to prevent diabetes.  And, for those with diabetes, as a method of achieving healthy blood sugar.  Avocado, peaches, star fruit, bananas, mango, plums and pineapple – what a fruit salad that would make! 

In recognizing that every physical body is different and responds to nutrition in a unique way, the American Dietetic Association now says, “the best mix of carbohydrate, fat and protein varies depending on an individual’s circumstances, caloric needs for weight control, and specific metabolic status” (meaning your cholesterol, blood pressure, etc.).  I’m pumped and can’t wait to let everyone know that even without diabetes, we should be striving for variety. 

Eating is PLEASUREABLE and should stay that way.  That said, pleasurable eating can be achieved with healthier foods – pleasure doesn’t just mean Ding-Dongs, Entenmann’s, and Cheesecake Factory carrot cake.  My tastebuds explode with delight when I take my first bite of Kale Salad (see August 2009 newsletter for recipe).  The explosion delights with tastes of salt, sour, sweet, pungent, bitter – and the fireworks don’t stop until I’ve licked the plate clean. 

To achieve a 5-star health status, consistently put veggies, whole grains, very lean meat (and in small portions) and fruit on your plate.  Think the DASH diet or the Mediterranean approach.  High color and volume and explosive taste is in style!
