Bean There

Many are so bothered by the musical rendition of legume digestion that they avoid them at all costs. Others are just bothered by the lengthy prep – and others just don’t know what to do with the simple bean.

Here are a few answers to questions I get all the time……..

Canned or dried? That depends on the length of time you have to prepare your meal. Canned beans are ready to go and with a rinse or two, the added sodium is reduced. On the other hand, the taste and texture of dried beans can’t be beat.

How do I cook dried beans? To save time, soak beans in water overnight. If you have a bit more time, bring them to a rapid boil for 2 minutes, cover and let soak an hour. These methods cut cooking time significantly.

Muffin Mania – or take 2 blueberry muffins and call me later

So many of my clients are busy folks and have a tendency to scout out breakfast options on their way to work. One client does a fairly good job of picking from the high fat options and orders a toasted English muffin with egg whites, no cheese, and a black coffee. While that’s certainly lower in calories than a Dunkin Donuts blueberry muffin (510 calories, 16 g fat, 51 g sugar) – or even the fat-free blueberry muffin (450 calories, 10 g fat, 45 g sugar), it doesn’t sound particularly appealing.

Were you surprised at the very little difference in calories between the regular and fat-free muffin selection?

What if I told you that 2 Dunkin Donut glazed donuts have 440 calories, 18 g fat and 24 g sugar? What? I can have TWO donuts or ONE muffin and still have LESS sugar? That’s right. Even so, all of these choices fill you with unwanted fat and sugar that crash down on your spinning, low-blood-sugar head mid-morning and it’s off to find more of the same. Chicken to go Vegan? Chicken Soup to the Rescue!

Hot, steaming chicken noodle soup. Yum…….just what you yearn for on a cold winter night. Especially with the sniffles, aches, and sore throat of a cold. This vegan version of Mom’s famous chicken soup is definitely a winner in taste and sniffle-beating. (more…)

Kids and Junk Food

It amazes me what propels researchers to research – even the ‘duh’ revelations they arrive at that may seem trivial, but I’m glad they do it. “We found that when you take soda and high-fat snacks out of schools, students did not compensate at home,” reports Marlene Schwartz PhD, head researcher in Connecticut.

Good to know! One of my observations was recognized in this study – our society has created easy, cheap, and convenient ways to eat unhealthy food and it seems like the NORM. It’s NOT. School is where education prevails – let’s band together to reduce junk food in schools, even to the chagrin of food industry who seek to build brand loyalty and schools who make money on their attempts.

GERD is the word

That awful burning sensation in your chest could be acid reflux, called GERD in the medical world. Gastroesophageal reflux disease to be exact. What happens is the spincter in your stomach called the cardiac spincter, right at the end of the esophagus, relaxes and allows some of the stomach acid to flow back up into the esophagus, damaging the lining there.
