Power up With Avocado

If you’re looking for a more versatile food, stop! You’ve found it in the delicious and creamy avocado.

Many shy away from avocados. “Don’t they make you fat?” is the outcry. Yes, avocados offer about a third of their calories from fat but the benefits far outweigh the risks. This luscious green fruit from Mexico is like a chameleon – dressing in disguises from ice cream to sandwich filler to salmon topper to power smoothies to salad dressing, the avocado boasts of antioxidants and good fat which increases your absorption of fat-soluble vitamins, like vitamin A (they also contain lutein, a great antioxidant for healthy eyes). Avocadoes contain a plant sterol that lowers cholesterol and has a creamy mouthfeel and satiation factor that keeps you from overeating.

Listen to the Smallies

I awoke this morning deep in dream. A colleague/friend was lamenting her fear of ATM machines. She quaked with fear, heart rate rising uncomfortably, visibly trembling, at the very thought of an ATM transaction.

During a walk with her, in this dream, she recounted a conversation she had with a mutual friend of ours who was facing a huge decision. “Listen to the smallies, I told her,” said my friend. What did you say? Oh, okay, I get it, huge tasks, projects, activities can be broken down into smaller components.

Aha, so let’s do the ATM according to ‘listen to the smallies.’ I had this great idea that she should put her ATM card in, and just practice listening to the beeps, entering her ID, and exiting without completing a real transaction. A line formed behind her, she freaked. Heart pounding, fingers, even hands and arms trembling like a branch in a tornado, we had to leave.

Then, she mentioned the challenge of scheduling appointments into her calendar. “Listen to the smallies,” I advised. A calendar is nothing more than big space comprised of little spaces. Fill them one at a time, you’re done. Now, how can this work in other areas, like diet and exercise? (more…)

Bean There

Many are so bothered by the musical rendition of legume digestion that they avoid them at all costs. Others are just bothered by the lengthy prep – and others just don’t know what to do with the simple bean.

Here are a few answers to questions I get all the time……..

Canned or dried? That depends on the length of time you have to prepare your meal. Canned beans are ready to go and with a rinse or two, the added sodium is reduced. On the other hand, the taste and texture of dried beans can’t be beat.

How do I cook dried beans? To save time, soak beans in water overnight. If you have a bit more time, bring them to a rapid boil for 2 minutes, cover and let soak an hour. These methods cut cooking time significantly.
